MIA

Welp, I got the flu! And now I have been down for the count for a few days. I also managed to spread it and give Sophie a horribly nasty cough :( 

Nothing is worse than having her sick and not being able to cuddle and smooch her. 

Chris is playing Mr Mom today and I've been so lucky to have my parents to help me with her and me also. So needless to say I've been missing in action and will need to do some catching up a little later. 

Get the flu shot people!!

Angel chicken aka the best chicken everrrrr

No lie. I made this crockpot chicken recipe I found on Pinterest called angel chicken and it was hands down the best chicken I've ever had home made. I'm not even exaggerating so I had to share this!

It was so easy and cooks for 5 hours in the crockpot.  Here's a sneak peak of how deliciously creamy the sauce looks 

The only thing I changed was that I used regular cream cheese and half a packet of onion soup mix instead of the onion and chive cream cheese tub.

Angel Chicken 

Mint Chocolate Chip cookies

I didn't get a chance to share my new favorite cookie recipe. I made 3 dozen for an ugly sweater party, 2 for a family party, and three for the house over the past month. They were so easy and absolutely delicious. Mint Chocolate Chip Cookies 💚💚

Mint Chocolate Chip Cookies

1 3/4 cups unbleached all-purpose flour (8 3/4 ounces) 
1/2 teaspoon baking soda 
12 tablespoons unsalted butter (1 1/2 sticks)
1/2 cup granulated sugar (3 1/2 ounces)
3/4 cup packed brown sugar (5 1/4 ounces)
1 teaspoon table salt 
1/2 tsp peppermint extract
1 large egg 
1 large egg yolk 
1 1/4cups high quality chocolate chips or chunks (in this recipe I prefer dark chocolate chips)
Green food coloring gel (optional)

1. Heat oven to 375 degrees. Spray your baking sheets with Pam or use parchment paper. Whisk flour and baking soda together in medium bowl; set aside.

2. Melt butter. Pour melted butter into a bowl or mixer.  Add food coloring and mix until food coloring is evenly distributed.

3. Add both sugars, salt, and mint extract to bowl with butter and mix until fully incorporated. Add egg and yolk and mix until mixture is smooth with no sugar lumps remaining.  Stir in flour mixture until just combined, about 1 minute. Stir in chocolate chips, giving dough final stir to ensure no flour pockets remain.

4. Shape dough into 1 inch round balls. Arrange 2 inches apart on prepared baking sheets.

5. Bake cookies 1 tray at a time until cookies are golden brown and still puffy, and edges have begun to set but centers are still soft, about 8 to 14 minutes, rotating baking sheet halfway through baking. I took them out just when the edges started looking brown. My over took about 10 minutes. Then let cookies cool and enjoy!

Christmas Cards Ordered!

Ordered our Christmas cards yesterday! I am so happy witth how they turned out and I can not wait to get them out! I have to recommend my new favorite place to shop for cards. I tried the whole wrap baby in lights thing but I think we seem to be past that point right now, she right away went to stick them in her mouth. It's also getting harder and harder to get her to take a picture, she moves around constantly so half the pictures are blurred and most have her arms in the air because she now has learned the reach out to Mommy to pick you up trick. I love love love that <3



St. Nichols Day - December 6th

Are any of you planning on celebrating St. Nicholas Day this week? I'd like to make this a tradition that we can do in our house someday. Sophie's a little young right now but I think I still might do it this year, if for nothing else but my own entertainment :)

I can remember celebrating back in grade school and all the kids in my class would put one shoe out in the hallway during class and wait for St. Nicholas to come by and put something small as a gift in your shoe. It's more of a European tradition celebrated mostly in Germany and the Netherlands. I'm all about it!

So, this Thursday night, I'm going to put me, Chris and Sophie's one shoe out in the hallway and just put a little treat in each. Mine will more than likely be a snickers, Chris's will be a craft beer of some sort and Sophie's a little toy :)

I'd love to hear about it if you do this tradition at your house or are planning on starting it this year!
